The Best Of Both Worlds Combined… Barbecued Chicken Kebabs With Bacon!

The following recipe only serves six. That's only one kebab per person. We want you to keep in mind that when making these, they will become addicting. You might find yourself quite disappointed when there is nothing left on your plate. Considering how good these are, you may want to cook a double or triple batch. So, don't limit yourself to only six kebabs… After all, don't you need a “tester,” while you are cooking? I thought so. Now, let's get started!

What you will need:

  • 2 pounds boneless, skinless chicken thighs or breasts

  • 2 teaspoons kosher salt

  • 1 1/2 tablespoons sweet paprika

  • 2 teaspoons smoked paprika

  • 4 teaspoons sugar

  • 2-3 slices raw bacon, cut into 1/2-inch pieces

  • 1 cup of your favorite BBQ sauce

How to create a masterpiece:

  • In a large bowl, toss the chicken with the salt.

  • In a small bowl, combine the paprikas and sugar. Place the raw bacon in a food processor and pulse for about 30-45 seconds, until a smooth paste forms, scraping down the sides of the bowl twice throughout. Add the bacon paste and spice mixture to the chicken. Mix with hands or spatula until the ingredients are blended and chicken is coated. Thread the chicken onto the skewers, rolling or folding as needed to maintain 1-inch cubes.

  • Grill the chicken over the primary burner with lid closed, turning one-quarter of a turn every 2 minutes or so, until browned and slightly charred. Brush the top of kebabs with BBQ sauce; flip and cook until sauce is browned in spots, about 1 minute. Brush second side with sauce.

Once done, your meal can be completed with greens, buttered and salted, such as asparagus and broccoli. Rice will compliment this dinner well.

Consider instituting a kebab night with the family. Instead of having a taco night, why not make kebabs with loved ones. This is a great dish to get your future chef inspired; and quite obviously a delicious one! Skewer with caution, and make a night to remember!
