
This classic recipe makes enough for four servings but if you want plenty more to enjoy again for another meal, you can just double the ingredients. You can use yogurt instead of sour cream if you want to make it a bit healthy.
If mushrooms aren't your thing, feel free to leave them out completely. This only takes ten minutes to prepare and twenty minutes to cook so you won't have to wait long to enjoy this mouth watering meal!

The Ingredients To Gather:
- 5 Tbsp butter
- 1 pound of top sirloin or tenderloin
- 1/3 cup shallots
- 1/2 pound cremini mushrooms
- Salt to taste
- Pepper to taste
- 1/8 teaspoon nutmeg
- 1/2 teaspoon of dry tarragon
- 1 cup of sour cream
The Step By Step Directions To Follow:
1. Melt 3 Tbsp of butter in skillet on medium heat. Increase the heat to high/med-high, add beef. sprinkle generously with salt and pepper. When both sides are browned, remove beef to a bowl.
2. In same pan, reduce heat to medium, add shallots. Cook shallots for a minute or two,. Remove shallots to same bowl as meat, set aside.
3. In same pan, melt another 2 Tbsp of butter. Increase heat to medium high, add mushrooms.
4. Cook, stirring occasionally for 4 minutes. Sprinkle nutmeg, tarragon on mushrooms.
5. Reduce heat to low, add sour cream to mushrooms.
Mix in the sour cream thoroughly. Don't let the sour cream boil or it may curdle. Stir beef , shallots. Add salt, pepper.
