
The next time you want to enjoy enchiladas made from scratch, but want to save about twenty minutes on prep time, go ahead and use this recipe instead of what you were originally thinking.

Things You Will Need:

2 tablespoonsextra virgin olive oil

1 cupfinely chopped white onion

1 tablespoonfresh minced garlic

1 poundlean ground beef
-
Old El Paso™ Red Enchilada Sauce
-
½ cupsour cream
-
1 cupblack beans
-
1 cupcorn kernels
-
Old El Paso™ green chilies
-
6Old El Paso™ Flour Tortillas
-
1 cupshredded cheddar cheese
Preheat oven to 350 degrees F. and lightly spray a 9×13 inch baking dish with cooking spray.
Heat oil in large skillet over medium heat. Add onion and garlic, cooking for 5 minutes until softened. Add ground beef, cooking until crumbled and browned. Drain if needed. Add enchilada sauce and sour cream. Stir to combine. Remove from heat.
Tear tortillas into bite size pieces and place half into prepared baking dish. Top with half of the meat sauce, black beans, corn, green chilies then top with remaining tortillas. Top with rest of meat sauce and shredded cheese. Bake for 20 minutes, until cheese is hot and melted.
