The Possibilities Are Endless With These Sausage-Stuffed Zucchini Boats

This recipe serves 8 and has just 153 calories per serving. And it's a good thing, too, because we can guarantee you'll want more than one! Fortunately, you can go back for seconds and still keep your calorie count low.

Ingredients to Gather

1 1/4 cups quick marinara sauce
4 (31 oz total) medium zucchini
1 tsp oil
1/2 small onion, finely diced
3 cloves garlic, crushed
1/2 cup diced red bell pepper
14 oz lean Italian chicken sausage, removed from casing (Al Fresco)
1/2 cup part skim shredded mozzarella (Polly-O)
8 tsp grated Parmesan cheese

Directions to Follow

Begin by boiling a pot of water and preheating your oven to 400 degrees Fahrenheit. Next, cut each piece of zucchini in half (lengthwise). Scoop out the insides of the zucchini, leaving 1/4-inch of flesh. (You can use a spoon or a melon baller for this.) Boil each piece of zucchini for 1 minute and then take out of the water. Then, pour 1/4 cup of the sauce into a baking dish and lay the zucchini pieces on top. The cut-out sides should be facing you. Finally, you're ready for the bulk of the cooking:

In a large saute pan, brown sausage, breaking up as it cooks into smaller pieces until browned; set aside. Heat oil and add onion, garlic and bell pepper. Cook on a medium-low heat for about 2-3 minutes, until onions are translucent. Add chopped zucchini, season with salt and pepper and cook about 2-3 minutes. Combine with sausage and cook a few more minutes.

Using a spoon, fill each hollowed zucchini with 1/3 cup cooked sausage, pressing firmly. Top each with 2 tablespoons each of sauce, 1 tablespoon each of shredded mozzarella cheese and 1 teaspoon each of parmesan cheese.

To finish, cover the zucchini boats with foil and cook  35 minutes.

And you're done! These zucchini boats look and taste like they were served up at a gourmet restaurant, but they're so easy to make you can easily whip them up at home.
