There’s No Better Breakfast Than A Southern Staple  Like Waffles & Sausage Gravy

Delicious And Easy To Make, This Southern-Style Breakfast Is Kicked Up A Notch With The Use Of A Combination Of Herbs In The Waffles & Two Kinds Of Sausage For The Gravy. Say Goodbye To Pancake Syrup For Good!

Ingredients To Gather:

  • 2 1/2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon sugar

  • 1 teaspoon table salt

  • 1/2 teaspoon baking soda

  • 2 tablespoons vegetable shortening

  • 1 stick unsalted butter (chilled and sliced into pats)

  • 2 tablespoons rosemary (chopped)

  • 1 tablespoons thyme (chopped)

  • 1 tablespoon chives (chopped)

  • 1 1/2 cups low-fat buttermilk (chilled)

  • cooking spray

  • 1 tablespoon butter

  • 1/2 pound breakfast sausage (removed from casing)

  • 1/2 pound turkey sausage

  • 1/4 cup all-purpose flour

  • 2 cups milk

  • 1 teaspoon chives (chopped, for garnish)

  • kosher salt and freshly ground black pepper

Directions To Follow:

  1. For the Waffles: Preheat waffle iron.
  2. In a large bowl, add flour, baking powder, sugar, salt and baking soda. Combine well. Add shortening and  pinch into the flour to incorporate until it forms small, pea-sized cubes. Add cold butter. Toss until all of the pieces are coated. Press the cubes with your fingertips to flatten and freeze the mixture, for about 15 minutes.
  3. Add rosemary, thyme and chives to mixture. Combine. Add buttermilk. Using a fork, mix until the dough forms into a ball.
  4. Roll the dough with a rolling pin to 1-inch thickness. Using a 3-inch biscuit cutter, cut the dough into rounds. Re-roll dough until all is used.
  5. Spray waffle iron with cooking spray. Put biscuit dough rounds into waffle maker. Cook until golden brown, about 5 minutes. Remove. Serve with sausage gravy.
  6. For Sausage Gravy: Add butter to a large sauté pan. Heat over medium-high heat. Add breakfast and turkey sausages. Crumble sausages with a wooden spoon. Cook until browned, about 7-9 minutes. Add flour. Stir until dissolved. Gradually stir in milk. Cook until thick and bubbling, about 5-7 minutes. Season with Kosher salt and freshly ground black pepper to taste. Serve over biscuit waffles. Top with chopped chives.

This delicious dish is perfect for a special breakfast morning after a Holiday. It's also great for a weekend brunch. The waffles freeze well, so you can make them in advance.
