The Ingredients To Gather:
- 1/2 pound elbow macaroni
- 1 1/2 tablespoons unsalted butter, plus butter for greasing
- 1/4 cup grated Parmigiano-Reggiano cheese
- 2 tablespoons flour
- 3/4 cup whole milk
- 4 ounces cheddar cheese
- 4 ounces American cheese,
- 1 egg yolk
- 1/4 teaspoon smoked Spanish paprika
- 2 slices thick-cut bacon
The Step By Step Directions To Follow:
- Preheat oven to 425°F.
- Brush wells of four 12-cup, nonstick mini muffin tins with melted butter. Sprinkle with 2 tablespoons of the
- Parmesan cheese, pressing it up the sides.
- Cook macaroni until al dente, 5 minutes. Drain.
- Melt butter over medium heat.
- Whisk in flour, cook for 2 minutes.
- Whisk in milk cook, whisking constantly, until boiling and thickened, 5 minutes.
- Add cheddar, American cheeses, whisk until melted. Off the heat, whisk in egg yolk, paprika. Fold in the bacon, macaroni.
- Fill wells of muffin tins to top with macaroni. Sprinkle remaining Parmesan on top.
- Bake for 10 minutes, until golden and sizzling, rotating the pans halfway through cooking. Let cool for 5 minutes.
