
Here's that great tasting desert that the family will love! These Coconut Bars are sort of good for you and will not make you run a few miles the next day to work it off!
Let's Get Started…
Here Is What You Need:
For The Crust:
- ¾ cup almonds
- ½ cup oats
- ½ cup pitted dates
- ¼ cup unsweetened coconut flakes
- 2 tablespoons honey
- 1 tablespoon sweetened condensed milk
- 1 teaspoon vanilla extract
For The Cream:
- ½ cup coconut oil
- 2/3 cup unsweetened coconut flakes
- 2 cups greek yogurt (I used Fage)
- 2 tablespoons sweetened condensed milk
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 2 tablespoons honey
How To Put Everything Together:
- With coconut oil, grease a 9×9 pan
- For crust; put the almonds and oats in a food processor and blend till chopped finely.
- Add the rest of the ingredients for the crust until it's sticky. If it's not clumping together, you may need to add more dates.
- Put the crust mix in the greased pan and press into an even layer. Put in the freezer while you are making the cream.
- Pour the coconut oil and flakes into the food processor and blend for several minutes.
- Once the coconut mix has become creamy add the rest of the ingredients and blend til evenly mixed.
- Take crust out of freezer and coat top with cream.
- Freeze them for about one hour or until firm.
Finished!
You can take them out a little before if you don't mind the sticky mess of them. Now add a glass of milk and you are set to see those smiling faces on the kiddies faces.
