
Here's everything you need to make this lipsmacking dish. The recipe calls for oregano, rosemary and thyme, but you can mix and match seasonings and spices to create just the taste you want.
Ingredients To Gather:
- 6- 8 large sized russet potatoes, peeled and cut into 2 inch chunks
- Juice of one lemon
- 1/4 to 1/3 cup olive oil or Lemon Fused Olive Oil
- 1/2 tsp. kosher salt
- 1/2 tsp. cracked black pepper
- 1 1/2 TB. Oregano, thyme and rosemary are good choices
Directions To Follow:
Start by boiling the potatoes in salted water for between 3 and 4 minutes. Next, preheat your oven to 400 degrees Fahrenheit. Pour the water off of the potatoes and let them stand for 5 minutes before combining them with the rest of the ingredients. Toss until the potatoes are thoroughly coated. Put the potatoes on a baking sheet lined with parchment paper and roast for about 45 minutes, turning them every 20 minutes. Shake the pan after the first 10 minutes of cooking so the potatoes don't stick. You'll know the potatoes are done when they're golden brown.
This recipe serves four, but don't count on there being leftovers! We like this dish because it works well both as a main course and as a side dish. If you serve it as a main course, pair it with a couple of vegetables and maybe a hot buttered roll. However, it also complements many types of meat dishes. It's up to you!
