
The prep time is around ten minutes and the cook time thirty five minutes. And, the following serves between eight and ten people. Here we go:
•8 small sweet potatoes
•coconut oil
•3 avocados, peeled and pitted
•1 large tomato, diced
•½ cup diced red onion
•½ jalapeño, diced
•1 lime, juiced
•¼ cup chopped cilantro
•sea salt and pepper, to taste
•1 cup cooked black beans
•1 cup shredded cheddar cheese1. Preheat oven: 400 degrees.
2. Rub potatoes with oil and place in the oven: 25-30 minutes or tender.
3. Guacamole: Mash avocado then add tomato, onion, jalapeño, lime juice, cilantro. Salt and pepper to taste.
4. Sweet potatoes are done: Out of oven – Cut each in half. Scoop out half of the filling. Put filling aside.
5. A little black beans and cheese on each sweet potato half. Return to oven to melt cheese:
6. When melted, take out of the oven and top with a scoop of guacamole. Enjoy!
