
These mouthwatering ribs are a breeze to make. You can start the previous night by letting the spice mix soak into the pork. Just make sure you cook them over low heat and for a long time. Do not rush these ribs!

Ingredients To Gather:

1/4 cup sweet paprika

1/2 cup brown sugar

1 Tbsp black pepper
-
1 Tbsp garlic powder
-
2 teaspoons cumin
-
2 teaspoons salt
-
2 teaspoons cayenne
-
1 teaspoon dry mustard
-
1/2 teaspoon celery seed
-
1/2 teaspoon dried oregano
-
2 St. Louis-cut or spare rib racks
Directions To Follow:
1. Mix all the dry ingredients and rub them over the ribs.
2. Get your grill or smoker going at low heat, about 200-220°F. Lay the ribs down somewhere not directly over the heat source. Ribs should no sizzle. If they do, cool the grill until the ribs no longer sizzle when laid on grill. Cover the grill or smoker. Let them smoke for an hour.
3. Turn the ribs once every hour so they cook evenly. The ribs are fatty enough so you don't have to baste them. Depending on how you like them, the ribs will be done in 4-8 hours.

These ribs go great with other BBQ staples such as mac n' cheese, potato salad, or baked beans. Or all of them!
