These Top Sirloin Steak Tips Are Marinated In Harissa Sauce & Grilled To Perfection

Ingredients To Gather:

  • 1 2-pound top sirloin steak (about 1 1/2 inches thick), fat trimmed
  • 4 tablespoons extra-virgin olive oil, divided, plus additional for brushing
  • 4 garlic cloves, pressed
  • 2 tablespoons (packed) golden brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons plus 1 tablespoon harissa sauce

Directions To Follow:

  1. Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips.
  2. Cut each strip into 2- to 3-inch triangles.
  3. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend.
  4. Add beef; toss to coat evenly.

Next, marinate either at room temperature for half an hour, or cover and then chill for between 2 hours and overnight. Toss occasionally during this time. Drain the beef and then heat two skillets over high heat — large, heavy skillets work best. Apply plenty of olive oil to both skillets using a brush, and then add the beef tips to the skillets, dividing evenly between both. Cook the tips until they're browned on both sides, using tongs to turn them while cooking. This usually takes between 6 and 7 minutes for medium-rare meat. Then, take 2 tablespoons olive oil, 1 tablespoon harissa, and 2 tablespoons water and whisk in a small bowl. Add salt to taste and then drizzle this sauce over the beef tips.
