
This recipe serves 4 people, but of course if you want to make this delicious side for a bigger party then just go ahead and add more potatoes per person. You can also use a microwave to speed up the process for the first bake, but the oven is definitely what gives it a unique taste for the second bake.
Things You'll Need To Get Started:
4 large russet potatoes
2 tablespoons vegetable oil
½ cup sour cream
¼ cup unsalted butter
¼ cup finely chopped fresh chives
The Step By Step Directions To Follow:
Preheat to 425°.
Poke potatoes all over with a fork; rub with oil. Bake directly on oven rack until very soft when squeezed and skins are crisp, 50–60 minutes.
Using a serrated knife, slice potatoes in half lengthwise and scoop flesh into a medium bowl. Add sour cream, butter, chives, season generously.

After you have added all of your ingredients just pop them in the oven at 450 F and baked until they are golden brown. This typically takes about 25 minutes.
