This Authentic Italian Appetizer Will Have Everyone Coming Back For More! The Filling Options Are Limitless!

The Things You Will Need: 

  • 1 ¼  lb  all-purpose flour
  • ½  oz  fresh yeast
  • 1  potato, boiled and sieved
  • ½  lb  water
  • 1  lb  canned tomatoes
  •   lb  mozzarella cheese
  • salt and pepper

How To Prepare:

  1. Start out by making your dough with the water, flour, yeast and salt. Give your dough some time to rise, this should take about two hours.
  2. While your waiting for your dough to rise, you can get starting on making your filling. First things first, tackle the tomatoes. You'll want to cut your already peeled tomatoes, then squeeze and liquids out of them. You can just set them in the strainer. Once all the liquid is removed, you can add cut up mozzarella to your tomatoes and season with salt and pepper.
  3. By this time, your dough is nice and risen. Go ahead and roll is out until its about half and inch thick. Then take a cookie cutter and cut out circles that are about eight inches in diameter.
  4. Load up each disk with a little pile of your tomato mozzarella mixture, then fold into half circles and press the edges together with a wheel cutter or pinching them with a fork.
  5. Deep fry until the pastry is thoroughly cooked and your pockets are a beautiful golden brown.

Note: Serve with a delicious homemade Marianara Sauce for dipping. Also do not get shy with the Parmesan Cheese – That is what makes them so tasty.
