This Bacon Wrapped Meatloaf Recipe Will Have Everyone Begging For Seconds

Here’s everything you need for this stick-to-your ribs meat loaf. This recipe serves 8 and requires just 21 minutes of active time. You are going to really like how the bacon add's flavor to everything.

You can also substitute for ham if you want to.

Let's Get Started…

Ingredients To Gather:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 large celery stalk, chopped
  • 2 garlic cloves, minced
  • 1 jalapeno pepper, chopped with seeds
  • 2teaspoons kosher salt
  • 1/2teaspoon ground cumin
  • 1/4teaspoon ground nutmeg
  • 2 eggs
  • 1/2cup milk
  • 1/2cup tomato sauce or ketchup
  • 1cup dry bread crumbs
  • 2pounds meat-loaf mix (1 pound lean ground beef, 1/2 pound ground pork, 1/2 pound ground veal or lamb)
  • 4 strips thick-sliced bacon

Directions To Follow:

Begin by preheating your oven to 350 degrees Fahrenheit. Next, combine the onion, garlic, celery and jalapeno in a medium skillet and cook in oil over medium heat just until the vegetables are tender. This usually takes about 10 minutes. Next, add the salt, cumin, and nutmeg and remove from heat. Next, place the eggs in a large bowl and whisk, and then add the milk, tomato sauce, and bread crumbs. Finally, add the meat and the cooked vegetables. Combine them using either your hands or a spoon. Put the mixture into a 9″ x 5″ loaf pan by patting it in. Now, cut the bacon strips in half and place them over the meatloaf. Tuck the ends of the bacon into the loaf. Now you'll bake the meatloaf for about 1 hour and 15 minutes, or until a thermometer inserted into the meatloaf reads 150 degrees Fahrenheit. Take the meatloaf out of the oven and pour off the fat, and then allow it to stand 10 minutes before you serve it.

That sounds delicious! This recipe proves that experimenting in the kitchen can sometimes produce amazing results, and that you don't have to stick to the tried-and-true. While traditional meat loaf is great, we bet that everyone at the table will rave about this spicy, zesty version!
