The Ingredients To Gather:
- 1 lb ground beef
- 1 package taco seasoning
- 2/3 cup water
- 1 red bell pepper
- 2 3/4 cups salsa
- 1 package frozen sweet corn
- 6 flour tortillas
- 2 cups Colby-Monterey Jack cheese blend
The Step By Step Directions To Follow:
1 Heat oven to 350°F. Cook beef over medium-high heat 5 – 7 minutes, drain. Stir in taco seasoning, water, bell pepper strips. Simmer 3 – 4 minutes, stirring until thickened. Stir in salsa, corn.
2 Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
3 Top with half beef mixture. Sprinkle with cheese, tortilla halves. Top with remaining beef, cheese.
4 Cover baking dish with foil sprayed side down. Bake 35 – 40 minutes.
5 If Make Ahead And Frozen: Thaw overnight or in refrigerator. Remove plastic .Bake 1 hour – 1 hour and ten minutes.
