This Bone-In Rib Eye Requires Nothing More Than A Pinch Of Salt, Pepper & A Grill

Ingredients are simple, but the process of cooking the rib eye can be intimidating. Unlike other recipes, which you cook the meat on a stove, this recipe requires you to use charcoal and an outdoor stove!

Ingredients To Gather:

  • 2 pounds bone-in rib eye
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Coarse sea salt

Preparation To Follow:

  1. Put steak on a wire rack set on baking sheet.
  2. Dry with paper towels. Season with 1/2 salt per side.
  3. Chill uncovered (3 hours).
  4. Remove steak from refrigerator and let come to room temperature (1 hour). Pat dry. Season with 1/2 salt and 1/2 pepper per side.
  5. Sear steak over direct heat, 3-4 minutes per side.
  6. Move steak to indirect heat and grill, 3-4 minutes per side. Sear the bone side and the fat-cap side, 1-2 minutes per side.
  7. Grill steak to desired temperature, 14-18 minutes.
  8. Rest for 10 minutes.
  9. Slice, season with sea salt, serve.

After rendering the fat out, you can cook the rib eye to meet your taste. Most people prefer from rare to medium rare range, but you can cook it thoroughly all the way and have the meat well done as well! A quick suggestion on a possible side dish would be some seasoned scallions! Enjoy your simple dish!
