This Cake Calls For WHAT? I’ve Been Making It For Years But Never Thought To Add This!

This cake recipe makes enough for about six servings but if you are making it for a party or get together, you can always double or even triple the ingredients. This recipe calls for Ricotta cheese, it is recommended that you use a kind that isn't so dry so your cake will not be dry.

The Ingredients To Gather:

  • 1 ½ C couscous
  • 2 1/4 C boiling water
  • 1C butter
  • 1 egg
  • pinch salt
  • 1 3/4 C Ricotta Cheese
  • 7 oz cheese, such as mozarella, Taleggio or Monterey Jack
  • 1 1/2C honey
  • 2-3 pinches saffron threads or cinnamon
  • 1/2 C water
  • 1tsp orange flower water or lemon juice
  • 6 Tbsp pistachio nuts.

The Step By Step Directions To Follow:

  1. Preheat oven to 375-400 degrees
  2. Put couscous in bowl, cover with boiling water. Stir, let sit for 30 minutes.
    Fluff couscous with fork, stir butter into couscous, stir in beaten egg, salt. Spread half of couscous into pan , patting evenly to form the base. Mix cheeses 2-4 Tbsp honey. Spread honey mixture over couscous.
  3. Spread remaining couscous over cheese mixture pressing down gently. Bake until the couscous begins to puff, 30 min.
  4. Put remaining honey, honey or cinnamon , water into pan. Bring mixture to boil. Boil for 5-7 minutes until mixture turns to syrup.
  5. Remove from heat stir in orange flower water or lemon juice.
    When Kodafa is cooked place under the broiler for a few minutes to brown top of cake.
    Sprinkle with the pistachio nuts, serve warm with the syrup.
