
Here is what you put into your creamed spinach to make it delicious! 1 bag of spinach, 4 oz of cream cheese, ½ cup grated Parm cheese (Mmm! No powder!), 2 teaspoons of minced garlic, 3 tablespoons of chopped fine onion (I actually did leave this out, not an onion person) 2 tablespoons of olive oil and, as with the sautéed mushrooms, salt and pepper to taste!
Here Is What Else You Need To Grab:
- 5 boneless chicken breasts
- 2 slices Mozzarella cheese
- 1 Tbsp. Garlic salt
- 1 Tbsp. Seasoned salt
- 1 tsp. pepper
Directions To Follow:
1. Pre-heat oven to 350 degrees.
2. Spray a 9×13 casserole dish with none stick spray. Place seasoned chicken in the dish and bake for 20 minutes.
3. Medium heat: Saute onions. When softened, add spinach little at a time and cook. Add more until wilted. Stir in garlic. Add cream cheese and Parmesan cheese, stirring frequently until cream cheese is melted. Set to the side.
4. Melt butter and blend in olive oil over medium heat. Cook mushrooms until slightly tender. Stir in wine. Add garlic and season with salt and pepper. Cook until wine is reduced.
5. Turn chicken breasts over. Top each with an even layer of creamed spinach and mushrooms. Cover with two slices of cheese.
You will want to bake this for another twelve to fifteen minutes. The cheese should be bubbling when you pull it out of the oven!
Using a cooking thermometer, allow the internal temperature to reaches about 165 degrees. Remove it from the oven and let the meat rest for at least ten minutes before serving.
