
Notice that you can use already dried oregano or get fresh and dry it on your own. Both work equally well, but we like the feeling of accomplishment you get from creating the ingredients yourself.
Ingredients To Gather:
- 3 Chicken Thighs
- Few shakes of dry oregano (watch how to dry your own)
- Sundried tomato strips (or slice whole one into three)
- Three slices of triple smoked ham
- Three slices of Mozzarella cheese.
- 1 egg
- 1 cup of milk
- 1 cup of breadcrumbs
- Half cup Flour
- Olive oil
Directions To Follow:
- Unroll your chicken thighs and flatten them with meat mallet or back of heavy pot (use cling wrap).
- Preheat your oven to 160C or 320F.
- Add salt and pepper to thighs.
- Sprinkle some dry or freshly chopped oregano.
- Add 5 or 6 sundried tomato strips to your chicken
- Add one slice of smoked ham, tear to fit.
- Add one slice of Mozzarella cheese on top of ham.
- Roll chicken starting from cheese end.
Next one cup milk with one egg to create an egg wash. Use a whisk to mix it thoroughly. Now you'll need two plates: one for the flour and one for the breadcrumbs. Place the bowl of egg wash between them. Coat each piece of chicken with the flour and then rinse with the egg wash. Finally, roll it in the breadcrumbs. Repeat this process for each piece of chicken. Brown both sides of the chicken over low heat with olive oil. Place in the oven at bake for between 20 and 30 minutes.
Voila! That's all it takes. For an even more authentic Italian flavor, serve with tomato sauce. This recipe serves three and is ideal for intermediate cooks. It requires just 15 minutes of prep time, so even if you can't spend all day in the kitchen you can still prepare a dish that will satisfy the entire family!
