
This amazing beef wellington recipe makes enough for about four servings but if you having a dinner party or just one more to enjoy again later, you can double the ingredients. If you want to make this recipe even easier, you can use a frozen premade puff pastry.
You can use prosciutto instead of regular ham if you prefer that instead. This recipe takes ten minutes to prepare but about two hours to cook but it will taste so incredible you will forget all about how long you had to wait to enjoy it!

The Ingredients To Gather:
- 1 lb beef tenderloin fillet
- Salt and pepper
- Canola, grapeseed, or olive oil
- 1 lb mushrooms
- 4 thin slices ham or prosciutto
- 2 Tbsp yellow mustard
- 7 ounces puff pastry
- 2 egg yolks
The Step By Step Directions To Follow:
- Season fillet with salt, pepper. Heat a tablespoon or two of oil in a pan on high heat. Sear fillet in pan on all sides until well browned.
- Remove filet from pan, cool. Brush fillet on all sides with mustard.
- Chop mushrooms, put them into a food processor, purée. Heat pan on medium high heat. Transfer mushroom purée into pan cook.
- Remove mushrooms from pan, set aside to cool.
- Roll out a piece of plastic wrap. Lay out slices of ham on plastic wrap so that they overlap.
- Spread mushroom mixture over ham.
- Place beef filet in the middle, roll mushroom, ham over fillet, using plastic wrap so that you do this tightly.
- Wrap up beef filet into a tight barrel shape.
Preheat oven to 400°F.- On a floured surface, roll out pastry sheet to a size that will wrap around fillet.
- Unwrap fillet from the plastic wrap, place in middle of dough. Brush edges of pastry with beaten eggs.
- Fold pastry around fillet, cutting off any excess at ends.
- Place on plate, seam side down, brush beaten egg yolks all over top. Chill for 5-10 minutes.
- Place pastry-wrapped fillet on baking pan. Brush exposed surface again with beaten eggs.
- Score top of pastry. Sprinkle top with coarse salt.
- Bake 25-35 minutes. Remove from oven, let rest for 10 minutes.
