Ingredients To Gather:
- 3 1/2 pounds white or Yukon Gold potatoes
- Coarse salt and freshly ground pepper
- 8 ounces cream cheese, softened
- 4 ounces (1 stick) unsalted butter, softened
- 1/4 cup whole milk, warmed
- 1/2 cup heavy cream, warmed
Directions To Follow:
Start by putting the potatoes and 1 tbsp. of salt in a medium pot, and then covering it with enough cold water that the water is 2 inches above the mixture. Bring to a boil, and then turn down the heat and put a lid on it so that it's partially covered. Simmer for about 35 minutes or until the potatoes are tender. When they're done, drain off the water and let the potatoes stand until they cool off enough for you to handle them. Next, remove the skins and throw them away (they should just rub off). Cut the potatoes into large pieces, and then add cream cheese, butter, milk, and 1/4 cup cream. Beat in a mixer bowl until combined. Add salt and pepper and continue to beat until the potatoes are just the right consistency. Next, put the mashed potatoes back into the pot and turn the heat up to medium. Add the rest of the cream and cook the mixture until it's completely heated, stirring the entire time.

If you're not ready to serve right away, you can keep them warm for up to 2 hours by placing them in a covered bowl or over simmering water. In the meantime, you can prepare your main course and your side dishes for a rich and hearty meal!
