
Start by making 1/4-inch deep cuts on the steak, spacing them an inch apart. Combine the salt, sugar, and cayenne and rub this mixture over the steak. Then place the steak on a wire rack and let it chill overnight. Take it out and freeze it between 6 and 24 hours. When you're ready to cook, preheat your oven to 200 degrees Fahrenheit and fry the steak for about 3 minutes on each side. Next, roast it in the oven for between 30 and 35 minutes, and then make the spiced brown butter by melting butter and adding spice. Now you're ready for the finishing touches:
The Butter Basting
Remove the steak from the oven and spoon about a third of the spice-infused butter over, turning to coat both sides. Poke thermometer probe into the center of the strip side and roast steak, basting every 30 minutes or so with remaining butter, until thermometer registers 120°, another 1–1 ½ hours. (Alternatively, use an instant-read thermometer to check steak every 15 minutes after the first hour, and again every 5 minutes after 1 ½ hours. Once thawed, the temperature of the steak will rise about 1 degree per minute, so use that as a guide.)
The Final Fry
Remove steak from oven. Reheat reserved oil in skillet back to 350° over medium-high. Give steak a second fry, turning once, until a deeply browned crust forms on all sides, about 2 minutes per side. Transfer back to rack and let rest 10 minutes; this redistributes the juices inside the steak (resting: another pro move). Why sear again? It not only recrisps the first crust that softened during roasting, it also locks in juices and further develops flavor.

This is the most annoying page . Why do you have to go to about three or four pages for the recipe??
Annoying recipe, waste of 4 cups of oil for 1 steak. Why would you take all these silly steps when you can make a mouthwatering Ruth’s Chris steak at home. Grill outside to medium rare and when steak is a minute from desired doneness, put 1-2 T. of butter that you mixed with fresh thyme, coriander, cardamom on top of steak.. As soon as the butter melts on top, take off grill and serve. Delish!!!

Take your steak out of the package put it on the grill, grill the way you want it. No need to doctor it up with all that stuff. How you going to taste the meat? Might as well put all that stuff in your hand pop it in your mouth and swallow.

Went to three different sites- then it said recipe had been left in kitchen – what a joke & waste of time!
From what I read it is a 2 day process ..lol…get steak..use ready made marinade if wanted and throw on grill and cook to your preference.
Oh and it won’t take 4 hours to cook…lol

THAT IS A LOT OF WORK JUST TO HAVE A STEAK. UGH
Too much trouble (sorry to be negative). Put on iron skillet with nothing in it, on a burner on high and wait till the skillet is red hot. Salt and pepper the steak and put it in the skillet. Cover and cook 2 to 4 minutes depending on how red you like it. Do the same for the other side. Simple and tasty.

About this steak?? What does the 4 cups rice, bran and oil have to do with this?? Makes no sense. I agree with Susan this has been a problem for me for a while. Click next, click next page. Please put it all together.
