We like to use a Mexican lager beer in this recipe, but you can use any beer you prefer. You can add freshly chopped tomatoes and chiles instead of the canned ones if you like.
This recipe takes a few hours to make and you need to stir a few times, but that's all. It's one of the easiest recipes there are and delicious to boot!

Ingredients To Gather:
- 8 ounces penne pasta, uncooked
- 1⁄2 cup mexican lager beer (such as Corona)
- 4 slices bacon, diced
- 10 ounces rotel diced tomatoes and green chilies (not drained)
- 8 ounces cream cheese
- 2 cups milk
- 12 ounces Monterey jack pepper cheese, cubed
- green onion, sliced
- tortilla chips, crushed
Step By Step Directions To Follow:
- SPRAY crockpot with cooking spray.
- DUMP pasta. Add all the other ingredients (except green onion and tortilla chips) in the crockpot.
- COOK ON HIGH for at least 45 minutes. After that, stir every half hour or so, checking to see if the pasta is done. It can take from 45 minutes to two hours.
- SERVE — top with green onions and crushed tortilla chips! Be sure to turn off the crockpot or switch to the warm setting, so pasta won't get mushy.
