This stew is full of flavor and is super delicious! This is just what you need to keep warm during the cooler times of the year. You'll especially love how it will make your whole house smell super amazing!
Let's Get Started…
Things You Will Need:
-
cooking spray
-
2 T. flour
-
1/2 tsp. salt
-
1/4 tsp. black pepper
-
1 lb. veal shoulder, roast, cubed
-
20 baby carrots, medium
-
1 pepper, red, small, cut in strips
-
1 onion, large, finely chopped
-
2 garlic cloves. medium, minced
-
1/8 tsp. ground sage, or more to taste, or 1 tsp. fresh chopped sage
-
1/4 tsp. dried oregano, crushed
-
1/2 c. beef broth, canned
-
14 1/2 oz. tomatoes, diced, canned
-
Mushrooms (Optional)
How To Prepare:
- First things first. Get your veal ready. Your going to start off by dredging it in a flour mixture with salt and pepper. Then, go ahead and lightly fry in a skillet on the stove top over medium-high heat. I like to use coconut oil but pick whatever oil you prefer.
- Now we're moving over to our crock pot. Place your carrots in the crock pot and then your browned veal.
- Pour in 1/4 cup of your beef broth into the skillet you used to brown the veal. Your going to get all of the bits that stuck to the pan and then pour that liquid into your crock pot. Don't want to lose any flavor!
- Then you're going to add your onions, garlic and diced tomatoes into the crock pot along with sage and oregano. You can add mushrooms too if you want.
- Put a lid on it and cook on low heat for about eight hours.
Finished!
Note: My family loves enjoying this stew with chunks of crunchy sourdough bread that's buttered. We like to dip the bread in the broth as we go. Sometimes we even make sourdough bread bowls to enjoy the stew out of. What can we say … we. love. bread. Just like Oprah.
Enjoy!
