This Loaded Potato Casserole Was The Bomb! Seriously; If You Like Comfort Food You Need To Make This

This wonderful potato casserole makes enough for four or five servings but you can always double the ingredients if you want to enjoy it as a left over the next day. You can add parsley on top to give it even more flavor if you prefer. It takes about ten minutes to prepare and about an hour and a half to bake so all cheese can get nice and melted.

Let's Get Started!

The Ingredients To Gather:

  • 6 russet potatoes
  • salt and pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterrey cheese
  • 8 slices bacon
  • 2 cups milk
  • 2  eggs
  • parsley, to garnish (optional)

The Step By Step Directions To Follow:

  1. Preheat oven to 375 degrees. Butter two 9-inch pie pans. Set aside.
  2. Layer half of  potato slices in the dish, overlapping slightly.
  3. Season with salt and pepper.
  4. Sprinkle cheeses on top of the potatoes and add the crumbled bacon pieces.
  5. Add the other half of the potato slices on top of the cheese.
  6. Mix together the milk and eggs. Pour half of the mixture over top of the potatoes.
  7. Repeat the steps above for the second 9-inch pie pan.
  8. Sprinkle the parsley on top
  9. Cover with foil and bake for 90 minutes.
  10. Allow the dish to rest for 15-20 minutes.
