
For the onion in this recipe you can use either chopped white, green, or red onion. However, white onion is usually preferred. Make sure to make the corn bread first or have someone help if you're needing to be time efficient.

1 pkg. (8.5 oz.) corn muffin mix

1 pkg. (8 oz.) KRAFT Mexican Style Shredded Four Cheese
Step By Step Directions To Follow:

Heat oven to 350ºF.

Brown meat with onions and peppers in large skillet. Stir in next 4 ingredients; cook until heated through. Spoon into 13×9-inch baking dish sprayed with cooking spray.

Prepare muffin batter as directed on package; stir in cheese. Spread over meat mixture.

Bake 20 min. and check with a toothpick
Finished!
Let it cool for 10 minutes before serving and it may help to cut in various squares to help cool faster. A serving a lone is enough to fill you up, so sides aren't necessarily needed. Casseroles are great for pot lucks and they also hold well for leftovers. There's so many reasons to love it.
