This Oven Roasted Beef Tenderloin With Fresh Rosemary, Chocolate & Wine Sauce Is To Die For!

The next time you're entertaining the in-laws, you might want to make this dish to put your best foot forward. The steaks will taste so good it will immediately let them get their guard down.

Things You Will Need:

  • 1 (2-pound) beef tenderloin roast
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 teaspoons olive oil
  • 1/2 cup chopped shallots
  • 1 small carrot, finely chopped
  • 1 stalk celery, finely chopped (about 1/4 cup)
  • 1 clove garlic, minced (about 1 teaspoon)
  • 2 cups dry red wine
  • 2 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1 tablespoon unsweetened natural cocoa powder
  • 1 teaspoon chopped fresh rosemary leaves

How To Prepare:

  1. Heat your oven to 425 degrees before you get started. This way, it's ready when you are.
  2. Next, you are going to season your meat liberally with salt and pepper. Then you'll want to sear all sides on a medium greased pan over high heat. This should take about 10 minutes to complete.
  3. Then you'll transfer your meat to a rack that is set on top of a standard baking sheet. You'll want to roast your meat for about thirty minutes, or until the internal temperature reaches around 140 degrees. Once this step is complete, remove your meat from the oven, wrap in foil, and let rest until you get to the next step that requires the meat.
  4. Make your sauce by heating oil in a large sauce pan and adding your mirepoix. Let cook for about five minutes before moving on to the next step. Add a little garlic and let develop. Then add wine and broth, as well as your tomato paste. Then add your herbs, like your bay leaf and thyme. You're going to let these beautiful aromatics develop and simmer for about 40 minutes. This should reduce your sauce to about 1/2 cup. Then you'll strain your sauce to get out all of the extra bits. Afterwards, stir in cocoa and rosemary and season with salt and pepper to taste. This sauce will be served on the sauce of your sliced tenderloin. Have you ever tasted anything to decadent?
