As soon as you are done mixing all of your ingredients together one-by-one take a large spoon, preferably a serving spoon, and dollop large piles in a row on top of one another.
You can also take a regular silver spoon and do the same thing but this method is way quicker. You are essentially making a bubble crust.
When the cobbler is done being baked I grabbed some coconut sugar and sprinkled about a table spoon all over the top. This method is not required but it was my secret ingredient.
~*~ Helpful Hint ~*~
You do not have to put a base of crust on the bottom. You could do this but the crust on top is supposed to be thick. When baking everything oozes down to the peaches. Do not worry about the bottom part.
The Step-By-Step Directions To Follow:
-
Preheat oven to 425°F.
-
Toss peaches with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish and bake in middle of oven 10 minutes.
-
Stir together flour, sugar, baking powder, and salt.
-
Bake in middle of oven until topping is golden.
Finished!
