I have a super easy and very yummy peach cobbler recipe. Used to make it a lot for Danny and put ice cream on top of it – just for him. 🙁 🙁
He is diabetic so I always used splenda and bought sugar free ice cream. I looooved taking good care of him.

I was thinking, maybe, the butter is to make a crumb topping??/ sense it has no liquid – unless I missed it – Ingredients To Gather:
6 large peaches
1/4 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon cornstarch
For biscuit topping
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
3/4 stick cold unsalted butter
The Step-By-Step Directions To Follow:
Preheat oven to 425°F.
Toss peaches with sugar, lemon juice, and cornstarch in a 2-qt. nonreactive baking dish and bake in middle of oven 10 minutes.
Stir together flour, sugar, baking powder, and salt.
Bake in middle of oven until topping is golden.

An easy topping. Old grand biscuits, they come in a can, cut in 4-6 shake in bag with cinnamon and sugar pit on top of cooked fruit and bake till brown

all I got to say..our $8 buffet (including tea) has peach cobbler that is about 1/8″ thick at best..it does give me a peach cobbler “fix”!
