The Ingredients To Gather:
- 1 cup pecans
- 2 cups sugar
- 1 cup buttermilk
- 1/2 cup unsalted butter
- 1 tablespoon honey
- 1/8 teaspoon kosher salt
- Flaky sea salt
The Step By Step Directions To Follow:
1.Preheat oven to 350°F. Line a 9×5″ loaf pan with parchment paper.
2.Toast pecans until fragrant and slightly darkened in color.
3.Heat sugar, buttermilk, butter, honey and kosher salt over medium-high heat, until butter and sugar are melted.
4.Immediately pour mixture into a medium bowl and, using an electric mixer on medium-high speed, beat until cool and thickened (it will be stiff and matte), 5–8 minutes.
5.Fold in pecans. Scrape fudge into prepared pan; smooth top and sprinkle with sea salt. Let sit at least 1 hour before cutting into pieces.
Instead of your typical dark chocolate fudge we want a nice light or white fudge with pecans. Oh yeah, that hits the spot.
I know what some of you are thinking. You’ve had white chocolate fudge before and it was good but maybe just a little too sweet? This is where the secret ingredient of buttermilk comes it. That tanginess notches the sweet factor down just enough where you have a smooth confection but it doesn’t make you squint from all that sugar.
