This recipe makes enough for six servings but you can always double or triple the ingredients if you like a lot of sauce or just need extra for the following day. This takes about ten minutes to prepare and about ninety minutes to cook but it will have your mouth watering long before it is done!

The Ingredients To Gather:
- 1/4 cup Olive Oil
- 1 Onion
- 5 cloves Garlic
- 2 whole Large Carrots,
- 2 cans Whole Tomatoes
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 2 teaspoons Sugar
- 2 Tablespoons Fresh Oregano
- 2 Tablespoons Fresh Parsley,
- 3 Tablespoons Tomato Paste (optional)
The Step By Step Directions To Follow:
- Heat the olive oil over medium heat.
- Add onions, garlic, and carrots, cook for 4 to 5 minutes, stirring occasionally.
- Pour the tomatoes and juice in a large bowl and use your hands to gently squish/ the tomatoes so that the juices are released and they are all broken up.
- Add the contents of the bowl to the pot and stir. Add salt, pepper, sugar, and oregano (or other dried or fresh herbs). Reduce the heat to low and simmer, uncovered, for 1 1/2 hours, stirring occasionally.
- Add fresh parsley at the end and taste/adjust the sauce for seasonings.
