This Sweet, Creamy Butternut Squash & Spinach Gratin Is So Good, We Dare You To Try & Resist Seconds!

The kids will never know exactly how good this is for them! It's a great side dish, that has a unique flavor that everyone is going to love!

Let's Get Started…

The Ingredients To Gather:

  • 3 -3 1⁄2 lbs fresh spinach
  • 3 -5 tablespoons unsalted butter
  • 3⁄4 cup finely chopped onion
  • 3 garlic cloves, minced
  • 1 1⁄2 teaspoons salt
  • 3⁄4 teaspoon black pepper
  • 1⁄4-1⁄2 teaspoon freshly grated nutmeg
  • 1 cup heavy cream
  • 4 lbs butternut squash
  • 1⁄3-3⁄4 cup parmigiano-reggiano cheese

The Step By Step Directions To Follow:

  1. Add spinach and cook 3 to 5 minutes.
  2. Thoroughly squeeze to remove excess moisture.
  3. Melt 3 tablespoons butter then cook onion and garlic.
  4. Add onion mixture to spinach along with salt, pepper, nutmeg, and cream and stir to combine.
  5. Preheat oven to 400°
  6. Cut squash to separate bulb section from solid neck section, then cut pieces lengthwise into 1/8-inch-thick slices with slicer or food processor.
  7. Sprinkle each layer of squash evenly with cheeses and dot with remaining 2 tablespoons butter.
  8. Bake until tender, 35 to 45 minutes.
  9. Remove paper and bake gratin until browned in spots, 10 to 15 minutes.
