This Tomato Dip Is Like A Little Taste Of Italy In Every Bite…You’ll Think Twice Before Sharing It!!!

This Roasted Tomato Dip recipe calls for incorporating fresh herbs, however, dry herbs will work just as well. To increase taste bud satisfaction, choose bread that has garlic or basil. It's delicious.

Ingredients To Gather

2 pints Cherry Tomatoes (halved)

6 Garlic cloves (peeled and smashed)

2 sprigs fresh Oregano (leaves torn)

2 sprigs fresh Thyme (leaves torn)

18 ounces Whipped Cream Cheese (room temperature)

1 cup Mozzarella Cheese (grated)

1/2 cup Parmesan Cheese (freshly grated)

1/4 cup Extra Virgin Olive Oil

Salt and Pepper

2 Baguettes (sliced and lightly toasted)

Step By Step Directions 

  1. Preheat oven to 450°F and line a baking sheet with aluminum foil.

  2. In a large bowl, toss together the tomatoes, garlic, oregano, thyme, 1/4 cup olive oil, salt and pepper. Spread out evenly onto the prepared baking sheets and bake until tomatoes are slightly charred.

  3. In another large bowl, whip the cream cheese and stir in the mozzarella, parmesan cheese, roasted tomato and garlic mixture.

  4. Transfer to two 6-inch cast iron skillets and bake until golden brown on the top about 15 minutes.

And… it's ready to serve! Serve your guests, family and friends, or even just yourself this dip with bite sized pieces of delicious bread. You can choose to have your bread toasted or not toasted. Either way this appetizer is just delightful. So, with that said…Bon Appetite!
