This Traditional Chicken Pot Pie Is Just As Good As We Remember!

Need something the family will love? Here you have the traditional pot pie! It's back again and better than ever! So how can you go wrong with something this simple and tasty? Well, you just can't.

What You Need: 

  • 4 Tablespoons Butter

  • 1/2 cup Finely Diced Onion

  • 1/2 cup Finely Diced Carrot

  • 1/2 cup Finely Diced Celery

  • 3 cups Shredded Cooked Chicken Or Turkey

  • 1/4 cup Flour

  • 3 cups Low-sodium Chicken Broth, Plus More If Needed

  • Splash Of White Wine (optional)

  • 1/4 teaspoon Turmeric

  • Salt And Pepper, to taste

  • Chopped Fresh Thyme To Taste

  • 1/4 cup Half-and-half Or Cream

  • 1 whole Unbaked Pie Crust

  • 1 whole Egg

  • 2 Tablespoons Water

Here Is How You Put Everything Together:

Preheat your oven to 375 degrees

Melt butter in a large pot over medium-high heat, then add in the onion, carrots, and celery. Stir until the onions start to turn translucent, about 3 minutes

Stir in chicken or turkey and sprinkle the flour over the top and stir it until it’s all combined with the turkey and vegetables. Cook for 1 minute, then pour in the chicken broth (and wine if using) and stir around and let it cook and the broth thicken.

Add the salt, pepper, thyme, and turmeric as it starts the thicken

Add the cream or the half and half, then stir and let it bubble up and thicken. About 3 more minutes. Add a splash more broth if it seems to thick. Remove from the heat.

Pour filling into a 2 qt baking dish. Roll crust out on a floured surface, then lay over top of the dish. Press so dough will stick to the outside of pan. Then use a knife to cut slits in top of crust for vents.

Now, mix the egg with 2 tbsp. of water and brush over the surface of the crust.

Put the pie on a rimmed baking dish and bake for 25 to 30 minutes until the crust is a golden brown and the filling is bubbly.

Finished!

Now your ready to eat! Dip up a big spoon and dig in. This will have you smiling from ear to ear for sure!
