Here's everything you need for this mouthwatering turkey tetrazzini. You need 20 minutes of prep time and 1 hour and 15 minutes of cooking time for this recipe that makes between four and six servings.

Ingredients To Gather:
- 12 ounces mushrooms, sliced (about 4-5 cups)
- 8 Tbsp unsalted butter, divided 3 Tbsp, 4 Tbsp, and 1 Tbsp
- 1/4 cup all-purpose flour
- 12 oz egg noodles, spaghetti, linguini or other pasta
- 1 1/2 cups of milk
- 1/4 cup cream
- 2 cups chicken broth
- 1/4 cup dry sherry (or vermouth or dry white wine)
- 3 cups coarsely chopped cooked turkey
- 1 cup peas
- 2/3 cup freshly grated Parmesan (divided into 1/3 and 1/3 cups)
- 1/3 cup shredded Swiss cheese
- 2 Tbsp lemon juice
- Salt and Pepper
- Ground nutmeg (optional)
- 1/3 cup fine fresh bread crumbs (or panko)
- Freshly chopped parsley for garnish (optional)
Directions To Follow:
- Start by preheating the oven to 375 degrees Fahrenheit, and then heating 2 or 3 quarts of water to cook the pasta in.
- Add 1 tsp. of salt for each quart of water.
- Next, cook the mushrooms in 3 tbsp. of butter over medium-high heat for between 5 and 7 minutes, stirring constantly, until the liquid from the mushrooms has evaporated.
- When they're done, set them aside and then make a roux by melting 4 tbsp. of butter in a large, heavy saucepan, and gradually whisking in milk, cream, chicken broth, and sherry.
- Bring the mixture to a simmer and cook over medium-low heat, stirring constantly, for between 5 and 8 minutes.
- Next, drain the pasta when it's done and then in a large bowl combine the pasta, sauce, mushrooms, turkey, and peas.
- Add 1/3 cup each of the Parmesan and Swiss cheese, stir to mix well, and then stir in the lemon juice.
- Add salt and pepper to taste, and then transfer the mixture to a buttered 3-quart casserole dish.
- Now, make the Parmesan breadcrumb topping by the breadcrumbs and the rest of the Parmesan cheese.
- Sprinkle this mixture evenly over the pasta, and then use 1 tbsp. of butter cut into pieces as a topping. Finally, bake the tetrazzini for between 30 and 40 minutes or until the top is golden and it bubbles.
