Turn The Beloved Reuben Sandwich Into A Hearty Dinner With This Amazing Casserole Recipe!

Here's everything you need for this tantalizing Reuben casserole. You can use any variety of mustard you prefer; they all work well with this casserole.

Ingredients To Gather:

  • 4 cups water
  • 1 1/2 cups milk
  • 1/3 cup butter or margarine
  • 1 tablespoon yellow mustard
  • 2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
  • 1 package (6 ounces) sliced corned beef, cut into 1/2-inch pieces
  • 1 can (14 1/2 ounces) sauerkraut , rinsed well and drained
  • 2 cups shredded Swiss cheese (8 ounces)
  • 4 teaspoons caraway seed, if desired
  • Thousand Island Dressing, if desired

Directions To Follow:

Start by heating your oven to 350 degrees Fahrenheit and then coating a 2 1/2-qt baking dish with cooking spray or grease. Take the butter and water and bring it to a rapid boil in a 3-quart saucepan and then take it off of the heat and stirring in the milk and the mustard. Next, stir in the two pouches of potatoes just until they're moistened and then let the potatoes stand for 1 minute or until the liquid is absorbed. After that, whip the potatoes with a fork until they're smooth. Next, take 3 cups of the potatoes and spread them in a baking dish, and then top them corned beef followed by sauerkraut and an optional 2 tsp. caraway seeds. Take the rest of the potatoes and spoon them on top of this mixture, and then sprinkle the cheese and the rest of the caraway seeds on top. Bake uncovered until the cheese turns a light golden brown, which usually takes about 20 minutes.
