We Added Something Surprising To These Ordinary-Looking Pretzels & Boy Were We Surprised By The Results!

Here's everything for these savory beer pretzels with cheese dip. This recipe makes four servings.

Ingredients To Gather:

For The Obatzda Cheese Mix:

2 tablespoons beer (we used an Oktoberfest style lager)
4.5 ounces brie cheese
3.5 ounces Limburger cheese (or other strong flavored soft cheese like Taleggio)
½ pack of cream cheese
½ yellow onion
½ tablespoon paprika
1 tablespoon caraway seeds
1 tablespoon minced chives
Salt, to taste
Pepper, to taste
½ red onion, thinly sliced (optional)

For The Pretzels:

1 pack premade pizza dough
6 tablespoons beer (we used an Oktoberfest-style lager!)
¾ cup flour
5 cups water
¼ cup baking soda
1 egg, beaten
Coarse sea salt

Directions To Follow:

Start by cutting the rind off of the soft cheeses while they're still chilled, and then cutting them into cubes. Next, use a fork to blend the cheeses, and then then add cream cheese, beer, spices, and diced onion. Thoroughly blend these ingredients together, and then add salt and pepper to taste and stir the mixture again before chilling it. Now, roll the pizza dough into a ball and then place it in a large bowl. Add beer and flour and mix with hands until the mixture has a firm texture and is no longer sticky. It may be necessary to add more flour to get the right consistency.

Next, tear off a piece of the dough and roll into a log measuring 6 inches long. Now, shape it into a pretzel. To do this, pull the ends of the log to the top of the circle before twisting the ends around each other one time and pulling them down so that they meet the bottom of the circle. Place the pretzel on a baking sheet, and then repeat this process to make 12 pretzels measuring 3 inches in diameter. Place the pretzels in the refrigerator and allow them to chill for 20 minutes, and then preheat the oven to 425 degrees Fahrenheit. Boil 5 cups of water in a medium-sized pot, and then add the baking soda to the pot. Immediately put the pretzels in the pot and boil for between 20 and 30 seconds. Remove them from the pot and place on a parchment paper-lined baking sheet, and then brush egg wash on top of each pretzel before topping it with coarse salt. Bake the pretzels until they're dark brown, typically between 15 and 20 minutes. Serve them with the cheese mixture, using it as either a dip or a spread.

We like pretzels but this version with the rich and creamy beer cheese dip sounds absolutely amazing! This is definitely something we'll serve at our next gathering, or just when we're lounging around the house binge-watching our favorite TV shows.
