The Pit Boys explain the complete process in their video, and it's easy to see just why they like this recipe so much. While it may sound a little more complicated than just making a regular hamburger patty, it follows much the same process.
First, take 1/3 cup of fine chopped jalapeno peppers, add them to about 3 lbs. of ground chuck, and then add a few cloves of minced garlic and some Habanero sauce. Next, smoke some bacon and then:
Add it to the ground chuck mix and give it a good mix. Now, we’ve got 3 lbs., we’re gonna make six 1/2 pounders. Next, what we wanna do is take each patty and get that coffee grind all over it, both sides. Not real thick, but not real thin. Coffee’s not just for breakfast. Just get that coffee grind all over that burger. And what we’re gonna do is place them over medium heat, about 275 to 300 degrees. You want a controlled heat. Put the cover on, we’ll come back and check in a few minutes. About 10, 15 minutes has gone by, and they’re still probably rare, medium rare on the inside, and we’re gonna flip ‘em. Now, that looks like a char but that’s just that coffee bean roasting a little bit more. You eat this, it’s gonna taste real sweet, just like a good cup of black coffee. I’d say these are almost done, so we’re just gonna move them aside off the direct heat, in the cool zone. Now we’re gonna add some cheese. Here we’ve got some shredded pepperjack cheese, use what cheese you like. While that cheese melts, you wanna put on some good buns, some good rolls, just like that.
