- 2 cups cornmeal
- 1 cup plus 3 tablespoons all-purpose flour
- 2 teaspoons baking powder
- 1-1/2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 2/3 cup water
- 1/2 cup buttermilk
- 1/2 cup butter, melted
- 1 cup grated onion
- 2 jalapeno peppers, seeded and chopped
- 1 small green pepper, chopped
- Oil for deep-fat frying
Directions To Follow:
- Begin by mix the cornmeal, flour, baking powder, sugar, salt and baking soda in a large bowl.
- Next, combine the egg, water, buttermilk and butter in another bowl using a whisk.
- Add the onion, jalapenos and green pepper, and then add this mixture to the dry mixture you combined in the first bowl.
- Stir just until moistened.
- Now, using an electric skillet or a deep fryer, heat oil to 375 degrees Fahrenheit.
- Take the batter and drop it into the hot oil, one at a time. A teaspoonful should be plenty.
- You can cook a few at once. Once they're golden brown on both sides, remove from the oil and drain on a paper towel.
