I Can’t Have Just One Of These Appetizing Hush Puppies!

Ingredients To Gather:

  • 2 cups cornmeal
  • 1 cup plus 3 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 2/3 cup water
  • 1/2 cup buttermilk
  • 1/2 cup butter, melted
  • 1 cup grated onion
  • 2 jalapeno peppers, seeded and chopped
  • 1 small green pepper, chopped
  • Oil for deep-fat frying

Directions To Follow:

  1. Begin by mix the cornmeal, flour, baking powder, sugar, salt and baking soda in a large bowl.
  2. Next, combine the egg, water, buttermilk and butter in another bowl using a whisk.
  3. Add the onion, jalapenos and green pepper, and then add this mixture to the dry mixture you combined in the first bowl.
  4. Stir just until moistened.
  5. Now, using an electric skillet or a deep fryer, heat oil to 375 degrees Fahrenheit.
  6. Take the batter and drop it into the hot oil, one at a time. A teaspoonful should be plenty.
  7. You can cook a few at once. Once they're golden brown on both sides, remove from the oil and drain on a paper towel.
