Ingredients To Gather:

One 6-ounce chicken breast

5/8 teaspoon sea salt

5/8 teaspoon freshly ground pepper

1 tablespoon extra-virgin olive oil

3 medium russet potatoes
-
3 slices bacon
-
1/4 cup cream cheese
-
1/2 cup water
-
2 garlic cloves, finely minced
Step By Step Directions To Follow:
- Preheat oven to 425°. Season chicken with 1/8 teaspoon each of salt and pepper. In a small pan, heat the oil over medium high heat. Cook chicken for 1 minute. Turn chicken and reduce heat. Cover pan. Cook for 8 minutes. Remove from heat. Leave covered for 10 minutes. Shred chicken.
- Scrub potatoes and quarter them. Cook in a medium pot of boiling salted water for 10 minutes or until they are soft. Drain. Mash potatoes.
- Bake the bacon on a baking sheet for 10 minutes, until the bacon is crispy. Remove from the oven and let cool. Crumble the bacon.
- In a separate bowl, whisk together the cream cheese, water, garlic and the remaining 1/2 teaspoon of salt and pepper.
- Combine the potatoes, bacon and cream cheese sauce in an 8 inch square dish and bake uncovered for 20 minutes or until bubbly. Remove from oven and let sit for 5 minutes before serving.

This is a hearty meal, great for a family dinner. For something different, you can add leftover meats to the mashed potatoes.
