
This BBQ recipe requires just 10 minutes of preparation time and five hours of cooking time. You'll also need to season it overnight. Because it makes six servings, however, it's well worth the effort. Save the leftovers for a tasty sandwich for tomorrow's lunch!
Ingredients To Gather:
- 1/4 cup (packed) light brown sugar
- 3 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 (4-5-pound) bone-in pork butt
Instructions To Follow:
First, a little preparation. Place the pork in a foil tray, and then mix the sugar, salt and pepper. When all ingredients are thoroughly combined, use the mixture to coat the pork. Cover with foil and place the entire tray in the refrigerator overnight. Now you're ready to cook.
Prepare a grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Uncover pork, then place pork in tray over indirect heat and close grill. Grill pork, basting with any juices from pan every 30 minutes and adding coals or wood as needed, until pork is very tender, 4–5 hours; loosely tent pork with foil if it starts to become too dark. Let stand at least 15 minutes before shredding.
What we like about this dish is that the pork keeps for several days after cooking. If you refrigerate it, it will stay good for up to five days, meaning you can prepare this dish well in advance of a gathering or dinner party. When you're ready to serve, simply preheat your oven to 250 degrees Fahrenheit, add a couple of tablespoons of water, and then cover and cook for between 25 and 30 minutes. It's a snap!
