Ingredients To Gather:
- 5 pounds boneless pork shoulder
- 3 tablespoons achiote paste
- 2 tablespoons guajillo chili powder
- 1 tablespoon garlic powder
- 1 tablespoon oregano
- 1 tablespoon cumin
- 1 tablespoon salt
- 1 tablespoon pepper
- ¾ cup white vinegar
- 1 cup pineapple juice
- 1 pineapple, skinned and sliced into 1-inch rounds
- 1 thick wooden skewer, trimmed to the height of your oven
- 10-12 small corn tortillas
- 1 white onion, chopped finely
- 1 cup cilantro, chopped finely
- 1 cup salsa of your choice
Directions To Follow:
Start by preheating the oven to 350 degrees Fahrenheit, and then slicing the pork shoulder into slices measuring about 1 cm.. Place the sliced pork in a large bowl, and then combine the achiote powder, chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and pineapple juice. Mash and stir this mixture until it's smooth and has no lumps. Now, pour the marinade over the pork, and then toss the pork in the marinade to make sure every piece is completely coated on every side. Use cling film to cover the dish, and then marinate the pork in the refrigerator for at least 2 hours and as long as between 3 and 5 days.
Now, take a baking sheet lined with parchment paper or foil, and place one or two slices of the pineapple on it before pushing a wooden skewer directly through the center of the pineapple. Take the pork out of the refrigerator, and then push the pork slices through the skewer, layering one on top of the other, until there's a 1-inch gap at the top of the skewer. Push another slice of pineapple on top of the skewer, and then bake for about 1 1/2 hours or until the meat is deep red and slightly charred on the outside. When the meat is cooked, let it rest for about 10 minutes and then carve off thin slices of both the pork and the pineapple.
Finally, assemble the al pastor. To do this, place a little bit of the pork on the tortillas, followed by a few of the pineapple pieces. On top of this, layer a sprinkle of onions, a bit of cilantro and then a spoonful of salsa.
