Ingredients To Gather:
- 2 pounds ground beef (preferably chuck)
- 1 yellow onion, minced
- 6 cloves garlic, minced
- 2 tablespoons ground cumin
- 2 tablespoons ancho chili powder
- 2 tablespoons dried oregano
- 2 tablespoons black pepper
- 1 tablespoon paprika
- 1 tablespoon Worcestershire
- 1 ½ teaspoons cayenne
- 1 teaspoon kosher salt
- 1 can (28-ounce) tomato puree
- 1 (12-ounce) bottle chocolate stout beer
- 4 ounces unsweetened baking chocolate
- 6 (2-ounce) bags Fritos
Directions To Follow:
Start by adding the beef to a Dutch oven and cooking over medium-high heat for 10 minutes or until browned. Next, place the beef in a bowl, leaving the grease in the pan. Then, put the pan back on the heat and add onion, and then saute for about 15 minutes or until it's browned and tender. Then, add the garlic and cook for about 5 minutes or until it softens and is just lightly browned. Now, add the cumin, chili powder, oregano, black pepper, paprika, Worcestershire, cayenne, and salt and stir for 1 minute before adding the cooked beef, tomato puree and stout. Bring the mixture to a boil and then reduce heat to low and simmer about 45 minutes or until thick, stirring occasionally. After this, turn off the heat and add the chocolate, stirring until it's well combined. Add fritos and then garnish and serve.

There are tons of ways to garnish this Frito pie, but we really like shredded Cheese, sour cream and maybe a couple of sliced jalapenos. Minced red onion, sliced scallions and cilantro leaves also work well.
