Begin by preheating your oven to 350 degrees Fahrenheit. Next, combine the cheddar cheese, butter, half and half, and salt. Mix at medium speed with a mixer. When that's blended, slowly add the flour, Parmigiano-Reggiano cheese, and basil. Mix the entire mixture. Next, coat a surface with flour and lay the dough on it. Divide the dough into four sections. Then, roll the dough until it's 1/8-inch thick. Use a star-shaped cookie cutter to cut the dough into pieces. Line a baking sheet with parchment paper and lay the stars on the sheet, keeping an inch between them. Finally, bake until the stars are golden brown; this usually takes between 11 and 14 minutes. Cool half an hour before serving.
