Who Needs The Main Entree When We’re Going To Fill Up On These Warm, Gluten Free Dinner Rolls?

Ingredients:

  • 1 cauliflower head
  • 3 garlic cloves, minced
  • 1/3 cup nonfat Greek yogurt
  • 1/2 cup cheddar cheese, shredded
  • 2 eggs
  • 2 egg whites
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  1. Preheat the oven to 400°F
  2. Steam cauliflower for 10-12 minutes then transfer in a food processor add minced garlic and pulse several times until smooth and creamy.
  3. Transfer mashed cauliflower in mixing bowl. Add eggs, cheddar cheese, Nonfat Greek yogurt, salt and pepper and mix together.
  4. In a separate bowl, beat egg whites until stiff. Then, slowly fold the egg whites into the cauliflower mixture.
  5. Coat a mini muffin pan with cooking spray. Then fill the cups with the cauliflower mixture. Bake for 20-25 minutes, until golden brown.
  6. Remove from the pan, and set on a cooling rack.

Here are few simple tips: When steaming cauliflower, make sure to check that the cauliflowers are tender and while baking the mixture, check that the biscuits come out golden brown.
