You Don’t Always Need Exact Ingredients To Make An All-Time Favorite Check Out These Ohio-Buffalo Nachos For Example

Here's everything you need for these rich and hearty nachos. You can also add any toppings you like, such as tomato, cilantro, red onion, chives or parsley.

Let's Get Started…

Ingredients To Gather:

  • 2 tablespoons butter
  • 1/4 cup minced onion
  • 2 large cloves garlic, finely chopped
  • 1 red Fresno chili pepper or jalapeno pepper, seeded and finely chopped
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 2 cups (1/2 pound) shredded Monterey Jack or mild cheddar
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large or 2 medium bags good quality kettle-cooked potato chips
  • 1 cup blue cheese crumbles
  • Franks RedHot or other cayenne pepper hot sauce

You'll also need celery and carrots diced into 1/8-inch pieces and one small bundle of scallions that's either sliced very thinly or chopped into fine pieces.

Directions To Follow:

Start by preheating your oven to 400 degrees Fahrenheit, and then heating butter in a saucepan. To this, add the onions, garlic, chili pepper. Stir for between 2 and 3 minutes, and then add the flour and stir for another minute. Add the milk using a whisk and whisk until the mixture thickens, and then stir in the Monterey Jack and Parmigiano-Reggiano cheeses. Layer potato chips on a baking sheet and then pour the cheese sauce on top followed by the bleu cheese crumbles. Bake until the cheese is melted and the edges are golden brown. When it's done, serve the entire thing on a platter or separate and serve in small bowls. Top it with hot sauce and add finely chopped veggies such as carrots, onions and celery.

We can't believe how good these nachos are. It just proves that it's a good idea to mix things up once in a while and experiment with new flavors and ingredients. You might just find your new favorite snack, just like we did with this recipe. Whip up a batch tonight and you'll see what we mean!
