
Here's everything you need for these tempting s'mores chicken waffles. Once you eat this dessert version, you won't be satisfied with plain old chicken and waffles ever again.

Ingredients To Gather:
- 3/4 cup whole wheat flour (all-purpose works too)
- 1/2 cup cocoa powder
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 3 large eggs
- 1/2 cup milk (I use almond, but any should work)
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1/2 cup sugar
- 1/4 cup chocolate chips
- 14 large marshmallows (2 cut in quarters)
- 6 sheets of graham crackers
- 3 boneless and skinless chicken breasts
- 2 tablespoon maple syrup
- 1 tablespoon coconut oil
- Cooking spray for oiling the waffle iron
Directions To Follow:
Start by combining the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl using a whisk. Take another bowl and combine the eggs, milk, oil, unsweetened applesauce, and sugar, and the combine the wet and dry ingredients and whisk together. After this, add the chopped marshmallows and the chocolate chips and then stir just until combined. Now, use cooking spray to coat the hot waffle iron and then pour about two-thirds of the batter into the iron, close it, and cook. Remove the waffle when it's done and then repeat this process with the rest of the batter until you've used it all.
Now, make the graham cracker coated chicken. To do this, take six sheets of graham crackers, place them in a bag, crush until they're crumbly and then place on a large plate. Next, whisk one egg in a bowl, dip a chicken breast in it, and then place the chicken on the plate and coat it on both sides with the crushed graham crackers. Now, add about 1 tbsp. of oil to a pan and then place the chicken in it. Cook on low to medium heat for about 6 minutes on each side and then repeat the coating and cooking process with each piece of chicken.
Now make the marshmallow-maple sauce. To do this, combine the 12 marshmallows, maple syrup, and coconut oil in a large microwave-safe bowl, and then microwave for 1 minute, pausing after 30 seconds to stir. Remove the mixture from the microwave when it's smooth. Finally, place one waffle and one chicken breast on each plate and top with the marshmallow-maple sauce.
