This recipe uses either cod or haddock fillets so you can choose which one you prefer. The secret to this recipe is the homemade tarter sauce that just brings the flavor to a whole new level.

The Ingredients To Gather:
- Vegetable oil
- 4 potatoes
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg
- 1 can soda water
- 1/2 cup rice flour
- 2 cod, haddock fillets
- Malt vinegar
- Tartar Sauce:
- 1 cup mayonnaise
- 1 tablespoon capers
- 1 tablespoon cornichons
- 2 tablespoons parsley leaves
- 1/2 lemon
- Dash hot sauce
The Step By Step Directions To Follow:
- Heat oil in fryer, 325 degrees F.
- Peel potatoes, cut, index finger size.
- Put potatoes in oil. Fry 2- 3 minutes ,drain.
- Crank oil to 375 degrees F.
- Combine flour, baking powder, salt, pepper, egg.
- Pour in soda water, whisk smooth. Spread rice flour on plate.
- Dredge in rice flour, dip into batter.
- Put chips in bottom of fryer, submerge in oil.
- Fry fish, chips 4 -5 minutes. Remove, drain season with salt.
- Tarter Sauce: Combine ingredients. Chill.
