You Might Be Surprised To Find Out The Secret How To Cook A Smoky, Tender Slab Of Prime Rib

Here's everything you need for this savory prime rib. You need two hours of prep time and two and a half to three hours of cooking time for this recipe.

Let's Get Started… 

Ingredients To Gather:

  • 1 cup kosher salt
  • ¾ cups cracked black pepper (butcher block black pepper preferred)
  • 1 Tbsp. cayenne pepper, or just enough to turn the rub pink
  • One 5 lb. prime rib
  • 2 cups Hill Country Rub
  • 1 large package wood chips, soaked in water for at least 30 minutes (and a smoker box, if using a gas grill)

Directions To Follow:

  1. Prepare the rub by combining salt, cracked pepper and just enough cayenne to give the rub a pinkish hue.
    Evenly coat the meat on all sides with the Hill Country Rub. Let it sit in the rub for at least 1½ hours, or up to 24 hours, in the refrigerator. Before cooking, remove the meat and allow to come to room temperature.
    If grilling, begin by setting up your grill for indirect grilling. Place a drip pan in the center, and brush the grates lightly with oil to prevent sticking. If using a charcoal grill, preheat to low and place wood chips directly on the coals; cover once they start smoking. If using a gas grill, place wood chips in a smoker box, place the box on the grates over the source of the heat, and preheat to high.

2. Once smoke forms, reduce the heat to low and cover. When the temperature reaches 200 degrees Fahrenheit, put the prime rib on the grill with the fat side facing up and then cover. Watch the meat making sure the temperature doesn't go above 215 degrees Fahrenheit or below 200 degrees Fahrenheit. Cook for around 3 hours or until the meat reaches an internal temperature of 120 degrees Fahrenheit.

3. Use a slightly different method if you're cooking the prime rib indoors instead of grilling it. In this case, preheat the oven to 200 degrees Fahrenheit and then put the seasoned prime rib on a rack and over a roasting tray. Cook for around 2 hours or until it reaches an internal temperature of 110 degrees Fahrenheit. Then, raise the heat to 400 degrees Fahrenheit and cook for another 15 to 20 minutes or until the meat reaches an internal temperature of 120 degrees Fahrenheit. When the prime rib is done, place it on a cutting board and allow it to rest for between 15 and 20 minutes before serving.

We really like this prime rib with some horse radish (especially if it's fresh) or perhaps some barbecue sauce on the side. However, it tastes great on its own as well.
