
If you've never made mashed potatoes before, know that there's really not much to it. You'll be finished preparing it by the time your steak is off the grill.
All you need to whip them up is the following…
The Ingredients To Gather:
- 2 – 2.5 lbs young potatoes
- 5 oz turkey bacon, chopped (I used organic Applegate)
- 4 oz cream cheese, full fat
- 1/2 cup any milk (I used unsweetened almond milk)
- 3/4 tsp salt
- 3 tbsp green onions, finely chopped
- Cooking spray (I use Misto)
Now you're ready to get started!
The Step By Step Directions To Follow:
- In a medium pot, add potatoes and water just enough to cover potatoes. With a lid on bring to a boil, then reduce heat to low and cook for about 10 – 15 minutes or until potatoes are soft when poked with a knife.
- In the meanwhile, preheat non-stick skillet on medium heat and spray with cooking spray or add a bit of coconut/avocado oil. Add bacon and cook until golden brown and crispy, stirring occasionally. I would say around 7-10 minutes.
- Drain potatoes and add cream cheese, milk and salt. Mash using a masher until well combined and desired consistency (in this case I like some chunks of potatoes left). Add bacon and green onions; stir with a spoon until well mixed. Serve hot with fresh salad or meat of choice.
